CHEFS
Our chefs will be:

Sam Buckley, Chef Patron at Where the Light Gets In: Growing up in Marple, WTLGI creator Sam fell into cooking whilst studying art at college, starting off as a waiter before moving into the kitchen. Over the next fifteen years, Sam divided his time between cooking, touring with various bands and, after completing a journalism degree, writing. He has worked under the likes of Paul Kitching, Simon Rogan and Gary Rhodes and opened WTLGI in 2016.

Sam Grainger, Chef Patron at Medlock Canteen: Liverpool born and bred Sam Grainger is Executive Chef at the critically acclaimed Belzan in Liverpool, a small neighbourhood restaurant serving an eclectic mix of dishes inspired by places he’s been and people he’s met. With a focus being on British produce interwoven with Japanese/European ingredients and techniques, Belzan also holds a yearly collaboration series with the country’s best chefs. From this, Madre was born: a Mexican taqueria in partnership with London based Breddos tacos. Madre resides in the Royal Albert Dock in Liverpool and Manchester. Sam’s latest venture is Medlock Canteen in Deansgate, Manchester, a spot that combines the laid-back vibes of American diners with the charm of Parisian bistros. You’ll find Sam cooking between all restaurants where big flavours resonate through the menus.

Maray:
Maray draws inspiration from Paris's vibrant Le Marais district, offering a menu of Middle Eastern, Mediterranean and North African inspired sharing plates with a big focus on vegetarian and vegan ingredients. Their food menu is accompanied by a stellar selection of bold, punchy cocktails, a wine list that showcases lesser-known varietals from diverse winemaking regions closely linked to their food menu, as well as local beers and a variety of no-and-low alcohol options.

Dishoom:
Dishoom pays loving homage to the Irani cafés that were once part of the fabric of life in Bombay. At Dishoom Manchester you can enjoy an all day menu that offers delicious dishes from Bombay and beyond.

The Little Sri Lankan will be returning, bringing traditional Sri Lankan food with a modern twist. The Little Sri Lankan came to fruition because Malanie and Michael wanted to share their family dishes and Sri Lankan cuisine with people, and to spread their love of the cuisine to everyone they meet. They can’t wait to cook for you.

Nafa - Survivor and Refugee Chef. After fleeing torture and persecution in her home-land of Sri Lanka, Nafa came to Freedom from Torture for support and counselling. After some time she joined Freedom from Torture's therapeutic baking group, which allowed her to re-discover her love of cooking and connect with other survivors. Since finishing her therapy, Nafa volunteered her time teaching many group cooking classes over the pandemic, has gained experience working in top hotel kitchens.

ENTERTAINMENT

Legendary Manchester artist Stan Chow will be on the decks, mixing mellow beats for us to enjoy throughout the evening.
